The Ritz-Carlton, Bangkok has officially elevated its culinary identity with the launch of two new tasting experiences at its flagship restaurant, Duet by David Toutain. This milestone marks a defining chapter in the restaurant’s evolution, showcasing a sharpened focus on ingredient-driven philosophy and the meticulous precision of French culinary craft.
Under the vision of Chef David Toutain and Chef Valentin Fouache, Duet has refined its voice through a deep respect for nature and the rhythm of the seasons.

The Philosophy: From Producer to Plate
At the heart of Duet lies a commitment to transparency and exceptional sourcing. Every course is treated as a journey of discovery; guests receive provenance cards at their table, allowing them to trace the origin of every ingredient from the producer to the plate. While grounded in classical French discipline—where sauces and structure form the backbone—the cuisine is expressed through a modern and deeply personal lens.
Two Menus, One Vision

The restaurant now offers two distinct pathways to explore its culinary world:
- The Signature Menu (THB 5,800++): The most complete expression of Duet’s philosophy. It features emblematic creations like the Alaskan King Crab with Shadi Schrenki caviar and kaffir lime, and the Brittany Blue Lobster, uniquely paired with spruce needles that evoke notes of lime zest and soft resin.
- The Discovery Menu (THB 4,500++): A more concise yet equally refined introduction. This menu evolves naturally with market availability, ensuring that every visit offers a fresh encounter with the chefs’ current inspirations.

Chef David Toutain in Residence: A Global Collaboration
To celebrate these new menus, Chef David Toutain will be in residence in late March 2026 for a series of exclusive dining events. The highlight of this residency is the "Three Kitchens, One Philosophy" Six-Hands Dinner on March 26 and 27. For the first time, David Toutain’s three acclaimed restaurants will unite under one roof:
- Restaurant David Toutain (Paris): Two Michelin Stars.
- Feuille (Hong Kong): One Michelin Star and Michelin Green Star.
- Duet by David Toutain (Bangkok): The host and evolving heart of the philosophy in Southeast Asia.
Chefs David Toutain, Joris Rousseau, and Valentin Fouache will compose an eight-course menu that demonstrates how a single gastronomic philosophy finds distinct expressions across Paris, Hong Kong, and Bangkok.
